1/2 cup dry quick-cooking steel-cut oats
3/4 cup water
1 cup of baby kale, stems removed
1 tbsp We Are The New Farmers fresh Spirulina
2 teaspoons hemp seeds
Salt and pepper
1 purple carrot, chopped
2 teaspoons coconut oil
1 teaspoon coriander seed, ground
1 teaspoon cumin seed, ground
Salt and pepper
1/4 cup spicy microgreens
Preheat the oven to 400 degrees Fahrenheit. Coat carrots in coconut oil and season to taste with cumin, coriander, salt, and pepper. Place in the oven for 20-25 minutes to roast.
HOW TO MAKE IT
Bring the water to a rolling boil. Reduce the heat to low and cook for about 5 minutes, or until all liquid has been absorbed. Stir in the baby kale and Spirulina until the baby kale and Spirulina are well combined.
Remove the pan from the heat and toss in the hemp seeds, salt, and pepper to taste. Pour the completed oatmeal into a bowl once it has cooled. When the carrots are done roasting, combine them with the microgreens on top of the cooked oats.
